The Asian Palm Civet (Paradoxurus hermaphroditus), known locally as the Luwak, is a nocturnal tree-dwelling mammal with an uncanny ability to sniff out the ripest, sweetest Arabica coffee cherries. During digestion, proteolytic enzymes in the civet's stomach break down the coffee proteins, reducing acidity and eliminating bitterness. The beans are collected, meticulously cleaned, sun-dried, hulled, and wood-fire roasted over clay stoves.
